Homemade Bread Recipe

Homemade Bread is one thing I’d shied away from making for years. I just always thought bread was too cheap and affordable for one to waste so much time and energy baking at home but boy, was I wrong or what? Nothing beats well baked homemade bread, absolutely nothing!
Remember the Fried fish Stew recipe I posted last week? Well, my mum insisted on bread and fish stew for breakfast on Friday but I was in no mood to go to the shops, so I decided to bake one. Best decision ever! My first attempt was OK but I wasn’t satisfied with the texture of the crust so I tried again twice yesterday (Sunday) till I got a perfect texture.

First off,  I love the aroma of fresh homemade bread and how it changed the smell of my kitchen and surroundings throughout the day. Homemade bread also affords you the opportunity to tailor bread to your taste and health needs. I’ve always been a sucker for Nigerian bread or Agege bread but find the store bought ones in these parts a bit too heavy and over preserved.  This recipe is very close to Nigerian bread style and tastes richer and sweeter  (not in an unhealthy way) than store bought bread.

You can use either strong bread flour or plain flour for this recipe though strong bread flour is recommended as this gives your bread a much softer and stretchy texture and you don’t end up with too much holes in your bread. If you can’t source bread flour, then feel free to use plain flour.

Let’s begin…



550g Bread Flour/Plain Flour

45g Sugar

7g Fast Action Dried Yeast/ 1 Satchet

2 Tablespoons Vegetable Oil

300ml Lukewarm Water (roughly)

1 Teaspoon Salt


First, you’ll need to proof the yeast. Do this by adding a quarter of the lukewarm water into a bowl, add half of the sugar and the entire yeast. Do ensure you use lukewarm water cos hot water will kill the yeast and cold water won’t activate the yeast. It has to be lukewarm; not hot, not cold, just in between. Whisk till smooth and set aside to rise for 5-10 minutes….

Mix 500g of the flour with salt and the remaining sugar and set aside, also mix the rest of the lukewarm water with the vegetable oil and set aside…

Check on the yeast, when it’s risen, add the water and oil mixture into the yeast mixture. I switched containers here….

Now add the flour and sugar mixture into the mixture intermittently, work with your hand or you can use a mixer….
Work the batter until you get a stretchy and sticky dough. Don’t worry if it’s too stretchy, this only means you’ve done good and will end up with really soft bread. Your consistency should be a bit thicker than pictured below, I forgot to take a final photo…

Now pour the rest of the flour onto a clean surface, transfer the dough onto the surface and begin to work your dough. Fold in more flour into the dough until you get a smooth, non sticky but still stretchy dough, add more flour if necessary. Be careful not to over work your dough. This should take 8 minutes thereabouts…

Now, grease a big bowl with oil, make sure all areas are covered. It is important to grease the bowl to prevent the dough from sticking to the bowl when it rises. Transfer the dough into the bowl. Cover with a thick towel and place in a dark place like your oven or microwave and leave the dough to rise for 1- 1.5 hours. Your oven is your best bet. If you’re in Nigeria or any hot climate region, this should take 45 minutes to an hour.

Do make sure the dough doubles in size, this is very necessary!

Check on the dough, it should be double its previous size by now…

Punch the dough in the middle to let out trapped air…

Gently remove the dough from the bowl and transfer unto a clean surface. Knead your dough again for 2 minutes, do not over work…

Oil a bread pan with butter, then transfer the dough into the oiled bread pan. Cover again with the thick towel and put it back in the dark place to rise a second time. This time for 45 minutes…

20 minutes before the 45 minutes is up, preheat your oven to 220 degrees Celsius/ 200 for fan assisted …

Take the dough out of the dark place after its risen, it should be double its size again by now. Place in the preheated oven and bake for 30 minutes or until it browns on the top. Notice how my dough rose to the top of the pan….

Transfer the bread onto a rack immediately and rub some butter on the top while it’s still hot, the butter will penetrate into the bread bread, making it more moist and yummy. This step is optional though…



Leave to cool for a bit and enjoy…..

  5. Hi Sisi Jemimah. I just got this bread recipe now. Thanks a whole lots. I have a question though, is it OK to leave the dough for so many hours till it rises? The last time I tried a bread recipe I didn’t wait any longer than the recipe Indicated irrespective of the dough not doubled in size. Trust me that bread was so hard! Thanks sis. Happy holidays.

    • Hi, sorry for the late response. Yes, you can wait for as long as it takes for the dough to rise. Some yeast brands aren’t potent enough and require more time to rise. Hope this helps…

  8. Hello sis. I’d love to bake bread but my daughter is gluten hypersensitive and can only eat cornbread or brown bread. Do you have a recipe using cornbread or almond flour? Or is this same recipe applicable? Thanks

    • I’m so so sorry for the late response. I e never used corn bread or almond flour before and I’m sure this recipe won’t apply due to the difference in density. I’m so sorry…

  9. Hi Sisi, i just tried your bread recipe but the top and bottom of the bread turned out hard and rough and the colour isnt as soft as yours. What could i have done wrong?

    • Hi, that’s odd. It’s one of three things. You either used All purpose flour instead of bread flour or you may have added too much extra flour to the dough while you were kneading (You only need enough to stop the stickiness). You may have also over worked the dough. Im sorry you experienced trouble but I’m sure you’ll do better on your next try, using these tips….

    • Bread flour is Strong flour. No difference. Most have strong bread flour written on them. Let me know how you get on Fifi…

    • Hi Fifi, sounds like your dough wasn’t soft enough or your dough wasn’t even at the time it was placed in the tin to bake. Did you end up using strong bread flour?

      • I used the normal flour. It was quite soft. Even the finished product was soft too, i guess it was not even. I will try again. I am happy that home made bread is not rocket science like i thought. Thanks to you!

    • Yes, you can if you know how to put it together. I haven’t got a clue but I know people fill a pit with sand, place the bread pan on top and cover, then place on a stove or something….I’m not entirely sure..

  10. Hmmm… This sounds pretty easy but I am so scared to try it cos I have tried bread a lot of times and I get it wrong its either too much air or its hard so I have given up. Do u really mean I don’t have to knead for more than 2minutes?

    • I was really hesitant before i decided to take the plunge as well but I’m glad I did now. Did you use strong bread flour or just plain flour for your previous attempts? I meant to write 8 minutes for the first kneading and 2 minutes the second time. That was an error, sorry…
