I love, love, love all things Coconut and I’m constantly trying to find new ways to incorporate it into food and snacks. This coconut Chocolate Chip Cookies recipe is very easy, so easy you can attempt it with your kids even at first try and you’ll be sure to nail it.
With Christmas in the air, now is definitely a good time to roll out tasty cookie recipes. Whether you’re treating the kids or hosting guests this holiday period, you just can’t go wrong with these bad boys. If you’re not keen on coconut, you can substitute it for Walnut, Pecan nuts or any kind of nut you so desire. You don’t have to use chocolate chip as well, you can leave it out altogether and make it plain or use white or dark chocolate or a combination of any two. This recipe should make 14-16 cookies.
So, let’s bake some Coconut Chocolate Chip cookies!
120g Room Temperature Butter
150g Granulated Sugar
140g All purpose Flour
1/2 Teaspoon Baking Soda
50g Flaked or Desiccated Coconut
160g Chocolate Chips
1/2 Teaspoon Coconut Or Vanilla extract
1 Medium Egg
1/2 Teaspoon salt
Pour the Sugar and Butter into a large bowl….
Using a hand or hand mixer, cream till fluffy…
Add in the Egg and Coconut/ Vanilla extract, continue to mix till well combined…
Combine the Flour, Baking soda and Salt together in another bowl, then sift into the batter…
Mix thoroughly till well combined, then add the Coconut flakes and Chocolate chips into the dough…
Fold into the dough….
Preheat your oven to 180 degrees Celsius, then using a spoon or ice cream scoop, scoop small rounded sizes into a lined baking tray. Make sure you leave enough room for spreading between each dough.
Bake for 13 minutes or golden brown on top….
Take out of the oven, leave to cool for 3 minutes, then transfer onto a cooling rack….
