Tuwo Shinkafa and Miyan Wake

Tuwo Shinkafa and Miyan Wake are popular Northern Nigerian delicacies. Tuwo Shinkafa or Rice tuwo as it’s also known is a “Swallow” made from mashed cooked Rice or Rice Flour while Miyan Wake is simply Beans soup, similar to the popular Yoruba Gbegiri. Tuwo Shinkafa is best made with short grain rice or any starchy rice type, I prefer Basmati, Jasmine or any sticky rice for Tuwo Shinkafa.

 

Miyan Wake Ingredients:

2 Cups Black Eyed OR Brown Beans

2 Cups Chicken or Beef Stock (Optional)

1 Cooking Spoon Palm oil

1 Medium Smoked Fish Shredded (Optional)

Cooked Assorted Meats (Optional)

1 Bell Pepper

1 Scotch Bonnet

1 Small Onion

1/2 Inch Ginger Root

3 Garlic Cloves

Small chunk of Dawadawa

2 Bouillon cubes

Salt to taste

Preparation:

Blend the Peppers, Ginger, Garlic, Onion, Dawadawa together till smooth, then set aside. Pick and peel dehull your beans, then cook on high heat till soft…

When it’s soft, mash it up till smooth or leave to cool, then pour in your blender and blend till smooth.
You need a semi fluid consistency so add enough water to dilute. If you’re using stock, add this as well, then place on a hob on medium heat and pour in the Palm Oil….

Stir and make sure it’s well combined, then add the Blended Pepper, Onion, Garlic, Ginger and Dadawa mix, you’ll need 2 cooking spoonfuls. Also add the Bouillon cubes and Salt to taste.

Leave to cook for 6-8 minutes, then add the cooked meats. Leave to cook for 5 minutes, then add the shredded fish if you’re using any…

Leave to cook for 5 minutes and it’s ready…

Tuwo Shinkafa Ingredients:

3 Cups Short Grain Rice or Basmati

Wash your rice till water runs clear then cook the rice on medium heat with enough water till fully cooked….

Then, mash up the rice and mix with a wooden spoon or ladle till very soft and sticky. Alternatively, you can use a food processor or hand/hand mixer..

Mix till very sticky.

If you had to transfer your Tuwo shinkafa into a bowl to mix, you’ll need to return it back on to the hob to steam for 2.3 minuets on low heat…

Then mold into small balls…
