3-4 Chicken thighs OR Whole Medium Chicken
1/2 Cup White Wine or White Vineager
4 Tablespoons Lemon Juice or 1 Whole Lemon
5 Tablespoons Olive Oil/ Vegetable oil
10 Birds eye Chillies or 3 Tablespoons Crushed Chilli Flakes
1 Medium Onion
5 Garlic Cloves
1 Teaspoon Smoked Paprika
1 Teaspoon Oregano
1 Teaspoon Black Pepper
5 Basil Leaves
2 Knorr Chicken Cubes ( Optional)
Combine all the ingredients except the chicken in a bowl, mix thoroughly. Transfer into a blender or food processor and blend till smooth. Transfer contents into a saucepan and place on low heat. Allow to simmer for 10 minutes. Set aside…
Wash chicken thoroughly, then make incisions on it so the marinade can penetrate into the chicken. Coat the chicken with some of the marinade. Ensure it is well coated….
Cover with cling film, then place in a cool place to marinate for at least 4 hours, ideally overnight….
When you’re done marinating, transfer the chicken onto a roasting tray, rub with some more marinade. Add some onion slices, then place in a preheated oven to roast for 15 minutes at 180 degrees Celsius.
After 15 minutes, transfer onto a roasting rack, rub some more marinade on the chicken and roast for a further 30-40 minutes; until lightly browned and cooked through…
