Easy Homemade Banana Bread Recipe

Banana Bread, also known as Banana Cake is a type of bread made from mashed ripe bananas. Banana bread is very easy to make and definitely a favourite in most homes.  It is usually moist, soft and sometimes preferred gooey.

For perfect Banana bread, you’ll need overripe Bananas, not rotten Bananas, just overripe. Banana bread is a super tasty and great way of using up over ripe Bananas instead of just chucking them out.

This recipe is pretty basic so you can spruce it up if you wish to. You can add some chopped Walnuts, Sultanas, chocolate chips if you prefer. I prefer mine simple, no fuss.

Let’s bake!

Ingredients:

255g Plain Flour

120g Brown Sugar

115g Butter

2 Eggs

450g Overripe Bananas

1 Teaspoon Baking Soda

1/2 Teaspoon Vanilla Extract

Pinch Of Salt

 

Preparation:

Preheat your oven to 180 Celsius!

Start by mashing up the bananas in a bowl, do not over mash, you should still have little chunks of Bananas in the mixture.

Mine is definitely over mashed and this is because my Bananas were really over ripe. You should aim for a semi mashed consistency really.

In a mixing bowl, mix the Flour, Baking soda and Salt..

Cream the Butter, Vanilla Extract and Sugar….

Stir the Eggs into the Sugar and Butter mixture, then combine with the Mashed Bananas..

Pour the Banana mixture into the Flour and combine, do not over mix…

Grease your loaf pan…

Pour the mix into the loaf pan and place into the preheated oven. Place it on the middle shelf..

Bake for 50 minutes to one hour or until the middle is fully cooked.

Note: When you dip your knife into the centre of the bread, you’ll still end up with a bit of moisture, do not fret as the banana will be a little moist/gooey even after baking. It’s only normal…

When it’s baked, wait to cool for a bit, then overturn…

  1. Hi. Thanks for your brilliant recipes. I find that using baking soda leaves a strong taste in my baked goods. I don’t know if it is caused by the sort of baking soda sold locally in Lagos or if i am doing something wrong. Can i substitute with baking powder?

    • Hi, sorry for the late response. Unfortunately, banana bread needs baking powder to rise as needed. I can’t recommend using baking powder, I’m sorry. You probably use too much or maybe a bad brand as I’ve never had issues with it before…
