Liver And Kidney Sauce Recipe

Liver and Kidney Sauce is simply Liver and Kidney cooked in a light Caramelised Onions sauce. I was craving Kidney and Liver the other day, so decided to indulge myself by making this fast and easy recipe. You do not have to use Liver or Kidney for this sauce, any other protein will do just fine.


600g Liver And Kidney

1/2 Cooking Spoon Vegetable Oil

3 Tablespoons Soy Sauce

1 Tablespoon Butter

3 Cups Chopped Mixed Sweet Peppers

1 Big Onion Chopped

1 Cup Rich Beef Stock

Tablespoon Minced Ginger

Tablespoon Minced Garlic

1/2 Teaspoon Thyme

1/3 Teaspoon Curry Powder

1 Teaspoon Paprika Powder or Cayenne Pepper

2 Knorr Chicken Cubes



Wash the Liver and Kidney thoroughly to get rid of as much blood as you can. Add the Soy Sauce and mix thoroughly, then leave to marinate for 30 minutes,  then set aside.

Pour the butter into a wok or skillet, when the butter melts, thrown in the Chopped Onions and Saute till the onions turn brown. Do not cook on high heat or you’ll end up with burnt onions. You need the onions to caramelise as much as you can. When the onions are caramelised, transfer onto a plate and set aside.

Now, set the pan back on the heat. Add the vegetable oil. When it’s hot, add the washed Liver, Kidney, Thyme, Curry Powder, Knorr Cubes and Salt to Taste, then fry till it browns on all sides. Be careful when adding Salt especially if you’ll be using stock. Remember your stock already contains Salt.

When it’s browned, add the Beef stock, Ginger and Garlic and allow to cook till it’s fully cooked. This should take 7-8 minutes…

Now, add the Chopped Peppers and Cayenne/Paprika Powder cook for 2 minutes…

Then, add the caramelised onions back into the pan, taste for salt, adjust if necessary, then cook for a further minute…

Your Liver and Kidney Sauce is ready…

Serve with Boiled Rice, Plantain, Potatoes or Pasta.

Okay for a while I have constantly crushed on the food porn on Instagram (meisterkitan) … So on this day I decided to try the basmati rice and first thing that came to my mind was let me do a sisi Jemima, I live in the garlic capital of the world , so I thought I should try this recipe, but instead of liver and kidney , I used lamb rib cuts and pork neck… And it came out well … Thank you for your continue motivation and conquer of dishes one recipe at a time…

    • Liver and Kidney are quite bland so TBH you’ll definitely need Stock to up the flavour. You can use water but you’ll need to incorporate really good seasoning to up the flavour of the sauce.
