Roast Potatoes with Garlic and Herbs

This Roast Potatoes recipe is all you need to up your Roast Potatoes game. With this recipe, your bound to end up with sweet and fluffy Potatoes yet with a delightful crisp and crunchy exterior.

 

Ingredients:

6-8 Roasting Potatoes

1/2 Cup Vegetable Oil

1 Tablespoon chicken Seasoning

2 Sprigs Rosemary

1 Teaspoon Fresh thyme or Dried Thyme

4 Cloves Garlic

Salt to taste

 

Preparation:

These are the Potatoes I’ll be using..

Preheat your oven to 200 degrees Celsius!

We need to make Garlic and Herbs infused Oil.

So, combine half of the Chicken Seasoning , the Garlic cloves, Rosemary …

Then, pour the Vegetable Oil into a small saucepan and place on medium heat, then add the blended herbs. Sir continuously for 3-5 minutes. Then take it off the heat. Set aside.

Chop your Potatoes into smaller pieces, do not make them to small, just as pictured or even a tad bigger.

Into a large saucepan, our enough water to cook the potatoes and bring to a rolling boil. Then add the potatoes and salt to taste, cook for 6-7 minutes. do not over cook, the Potatoes should still have a bit of firmness after cooking.

When the Potatoes are cooked, toss the potatoes in the pan till it looks a bit fluffy, like this:

Back to the Infused oil we made, strain the herbs from the oil and pour the Oil into the Potatoes and make sure the Potatoes are well covered with the Oil. To avoid breaking the potatoes, simply toss a couple of times.

Then, spread the Potatoes on a roasting tray, then sprinkle the rest of the chicken Seasoning on them.

Place in the preheated oven and roast for 15 minutes on each side…
