Breakfast Series – Golden Skillet Potatoes

Skillet Potatoes are simply Potatoes and Bacon cooked to perfection in a skillet as opposed to cooking in an oven. I particularly love this dish cos it is very filling; it can be eaten as a full meal without requiring any sides. Now, if you do not eat Pork, then feel free to do without it. This recipe is yummy with or without Bacon. The  Bell Peppers are also optional.

Ingredients: Recipe serves 3

5 Big Potatoes (Irish)

200g Bacon, diced

1 Red Bell Pepper

1 Green Pepper

2 Tablespoons Vegetable Oil

1 Small Onion

1 Teaspoon Paprika( Optional)

3 cloves Garlic, minced

1 Tablespoon Minced Ginger

1 Teaspoon Dried Thyme

2 Knorr Chicken cubes

Salt to Taste

Preparation:

Start by washing, peeling, then chopping your Potatoes into small cubes…

Place the cubed Potatoes into a microwave and cook on full power for 5 minutes.

After 5 minutes, set a Skillet on medium heat, transfer your chopped Bacon into the cold pan, turn the heat to medium. Now, fry the Bacon till fully cooked. Transfer the Bacon into a plate; leaving the oil in the pan…

Add the Vegetable Oil into the pan, then, transfer the Potatoes into the Oil. Make sure your pan is large enough to accommodate the Potatoes without them overlapping.

I had to switch to a frying pan here cos I accidentally burnt some of my Bacon and couldn’t carry on using the burnt skillet.

Leave the Potatoes to fry without moving them around for 3-4 minutes or until they begin to brown underneath. Then you can toss them around for even cooking. When the Potatoes begin to soften, add the Knorr Chicken, Paprika, Thyme and Salt to taste.

Stir and combine and continue to cook till almost soft. By almost soft I mean soft but when you bite through, the potatoes still have a bit of crunch to them. I’m struggling to explain myself better here but I’m sure you’ll understand….LOL

Now, add the Onions, Garlic and Ginger, stir and combine….

Then, add the Chopped Peppers, stir and combine…

Now, add the cooked Bacon back into the Pan, stir and combine and cook till the Potatoes become fully soft…

    • Hi, thanks for stopping by. You can boil for a few minutes but be sure to get rid of most of the moisture contents before frying. You can also fry without boiling or microwaving, it’s just gonna take a bit more time to cook.,,

  2. I made this for breakfast and it was yum yum…. My picky kids especially my daughter loved it and she had seconds. I had no bacon at home so I substituted bacon for sausage and it was awesome. I think I am going to mix it up and put in more veggies and use shrimp when next I make it. Will sure to drop by and let you all know what the outcome is. Thanks Jemimah for this new recipe!

  3. Tried my hands on this beautiful recipe and I thoroughly enjoyed it. I used coconut oil instead of vegetable oil and boy the aroma was heavenly. Will definitely be trying my hands on more recipe from here. Great Job! 👍🏽

  5. I just made this dish for Dinner. I know it’s supposed to be a breakfast meal but it’s been on my mind all afternoon so I just had to get it over with. I used sweet potatoes and It was purrrrrrrfect!!! My hubby had 3rd helpings and my toddler cleaned his plate and that’s no small feat. Infact you are my food crush!! My kitchen bae.

  6. Hi, I used Irish Potatoes I think, well, they’re called Baking Potatoes but they look like the ones we call Irish in Nigeria. You can use pretty much any type really. If you’re gonna use sweet potatoes, then you won’t need to microwave them first. Sweet potatoes are really soft and won’t require as much frying time..

    • I hank you. Yes,you can use chicken. I would recommend raw boneless Chicken thigh. Season then Fry to incorporate the flavour of the chicken..
