Barbecued Chicken …Yess! Yes, I love my Chicken, funny how I hardly cook with Chicken, in fact, I don’t use Chicken for any Nigerian soups or stews, I’ll only eat them grilled or roasted or for intercontinental sauces.
Anyway, this oven style Barbecued Chicken was on the menu for lunch today. Normally, I would make my own Barbecue sauce from scratch but that only works when using a proper outdoor grill as the grilling method produces quite a lot of moisture during cooking but I promise to share another recipe featuring the home made sauce before summer ends or as soon as I can get my hands on an outdoor grill.
3 Chicken Leg Quarters
1 Cup Barbecue Sauce
Teaspoon Garlic Powder
1 Teaspoon All Spice (Pimento)
1/2 Teaspoon Cinnamon powder
Knorr Chicken Cube
1 Teaspoon Black Pepper
Salt to taste
For those wondering, these are the All Spice(Pimento) and Barbecue Sauce I’ll be using.
Wash your chicken thoroughly. Mix the dry ingredients thoroughly…
Rub the dry ingredients all over the chicken, making sure they’re well covered with the spice, remember to rub some underneath the Skin for thorough penetration. You may wish to make some incisions on the chicken. Leave to marinate for at least 2 hours. Overnight preferably.
Preheat your oven to 180 degrees.
After marination, arrange the chicken on a roasting tray, then place in your preheated oven and grill for 15 minutes on both sides.
Remember to turn the chicken over while grilling..
After 30 minutes, transfer the Chicken into a rimmed roasting tray.
Baste the chicken with the Barbecue sauce, increase the oven heat to 200 degrees and continue to roast for a further 35- 40 minutes or until fully cooked..
